Basil and Oregano Bruschetta Pork

Another unruly combination. Ingredient substitution is sometimes way better than intended. I have nothing against chicken but sometimes I’d like to eat pork once in a while. This recipe is simple as rub, bake and toss.

Ingredients: 1 packet of McCormick’s Gourmet Sweet Basil and Oregano Bruschetta Chicken, 2 servings worth of Fettuccini pasta, 1 can tomatoes, 1 lb pork diced, 1 tbsp rice wine vinegar, 1/3 cup oil.

Preheat oven to 425 °F. Mix oil and Seasoning Mix in small bowl until well blended. Reserve 3 tablespoons. Place tomatoes in single layer on one side of large shallow foil-lined baking pan. Place pork on other side of pan. Brush tomatoes then pork generously with remaining oil mixture. Bake 25 minutes or until pork is cooked through and tomatoes are tender. Meanwhile, cook pasta as directed on package. Drain well. Spoon tomatoes into large bowl; coarsely chop. Add pasta, chicken, pan juices, reserved oil mixture and vinegar; toss to coat.
