Japanese Milk Bread Loaf

The same Japanese Milk Bread rolls recipe can be made into one big loaf of bread or two smaller ones. Use a sharp knife to make the cuts right before you place it in the oven, be very careful not to deflate the dough. You don’t have to put an egg wash, just make sure you add a pan with very hot water in the bottom rack of the oven. The steam will make the outside of the bread really crusty! Also if the bread browns before you get the hollow sound at the bottom when you check if it’s done, just cover it with aluminum foil to prevent further browning. The loaf freezes very well, I keep it in the fridge and re-heat a slice or two in the toaster. It is also great with grilled cheese sandwich.
