Hands down, this is my second try at making Alfredo sauce from scratch. This one recipe I am continually trying to perfect. This time, the aromatic flavor of the shrimp mellowed down quite a bit that all I could taste was the mirin and garlic overpowering the pasta. Don’t get me wrong, it tasted good enough!
1 cup milk+1 tbsp flour+1 tbsp buttermilk(powder) =mix until no lumps
Saute butter, garlic, dried herbs(oregano&parsley), mirin, salt, and pepper. Add milk mixture + cheese and cook in medium low heat. Add salt & pepper to taste. Continue to stir so it won’t form any lumps. Once the sauce thickens, mix in cooked noodles of your choice.
This would go well with fresh basil leaves, but since I haven’t planted any this year….dried oregano and parsley will do for now.
