Pandan Angel Food Cake

Bake at 340ºF for 40-50 minutes

6×6 baking pan

Beat until frothy
3 egg yolks
25 g sugar

Then add the liquids
40 ml vegetable oil
50 ml milk
1tsp pandan extract

Sift 2x then add to egg yolk mixture
60g cake flour
1/2 tsp baking powder

Stiff peak mirangue
3 egg whites
30 g sugar – add 1/3 at a time


Fold 1/3 of mirangue into the egg mixture, and so on… Bake then let it cool upside down!
