Coffee Crackle Cookies

Temperature: 350°F – 10-12 minutes      Makes 16 cookies

Mix liquid ingredients
1/4 cup butter
1/3 cup sugar
2 eggs
1 tsp vanilla

Sift all dry ingredients
1 tsp cocoa powder
1/4 cup instant coffee
1 tsp baking powder
1/4 tsp salt
1 cup flour

Mix everything until combined. The batter may get very tacky, just place it in the fridge for a couple of hours until it hardens and becomes mold-able. Divide into 16 pieces, roll into balls. (at this point you can either roll them in powdered sugar or sprinkle the powder sugar later when they’re done cooking). Add toppings, or not, I’m adding almonds because we love almonds. Bake in the middle rack for 10-12 minutes.


Sprinkle some powdered sugar.
