Rolled Oats & Almonds Drop Cookies

Temperature: 375°F      10 Minutes      Makes 12 ea

1/3 cup butter
2 tbsp sugar
2 tbsp + 2 tsp brown sugar
— Mix until butter and sugar is incorporated (make sure you don’t see any streaks of butter).

1 egg
1/4 tsp vanilla
— Butter/Sugar Mix + Egg & vanilla = Wet mixture

1/3 cup + 1 tbsp + 1 tsp whole wheat flour.
2 tsp corn starch
1/4 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp all spice
1/8 tsp baking soda
1/8 tsp salt
— Wet mixture + Sift dry ingredients = Batter mixture

2/3 cups + 4 tbsp rolled oats (If you like oats, add more, if you don’t add  less)
1/3 cup almonds
— Oats & almonds + Batter mixture = Cookie dough

Use a small cookie scoop or a tbsp to make 12 even portions. You don’t have to flatten them because they will flatten once baked. Separate cookies 2 inches apart because they will expand. Bake at 375°F for 12 minutes. You have to let them cool so they can stiffen up for 10 minutes before placing in a cooling rack.

They are crispy on the outside and a little chewy on the inside. Nom
